When something goes sideways

The inside is gummy or wet

Almost always underbaked or sliced too soon. Bake to 200Β°F+ internal, and honor the full 2-hour cool. Also check your oven with a thermometer β€” many run 25Β°F cool.

My bread is... purple?

Certain psyllium brands react during baking and tint the crumb violet. Completely harmless, tastes identical. If it bothers you, try a different brand (many bakers report NOW brand stays golden).

It didn't rise much

Expected β€” keto loaves rise modestly, maybe 30%, not doubled like wheat. But if it's truly flat: check your baking powder is fresh (fizz test: Β½ tsp in hot water should bubble hard).

Dense, heavy crumb

Try whipping the 4 egg whites to soft peaks and folding them in last, before the boiling water. More air in = lighter crumb out.

Bitter or soapy aftertaste

Usually the baking powder (switch to an aluminum-free brand) or too much psyllium. Measure by weight, not volume.

Crust went soft overnight

Normal for keto bread stored covered. A 3–4 minute toast or a few minutes in a 350Β°F oven brings the crust right back.
